My work place gives all employees a small turkey for Thanksgiving. This year, I'm thinking I will brine it. My meal plan is traditional and simple.

Roast butternut squash soup served with a piping of thyme-infused creme fraise, a dollop of warm apple chutney and cinnamon-pumpkin scones. To begin: Halve a giant-ass squash. Rub with olive oil and S&P. Roast in 350 degree oven for 40 mins. Scoop guts out and place in processor. Add chicken stock , herbs and a mirapoix of celery, onion and roasted red peppers. Puree the shit. Place in pot on back of stove. Look up recipe for scones on Google. Have a drink.

Appetizer: Put a quick sear on a pork tenderloin. Use a really hot pan or you'll fuck it up and have gray meat. Finish in a 350 oven. Slice the loin into medallions and top with a slice of goat cheese and chips of deep-fried paper-thin garlic. Add another thin slice of cooked new potato. Top with another slice of the pork and secure with a frilly toofpick.

Sauce for the Pork: Reduce some orange juice and white wine in a saucepan. Add a tsp of orange marmalade and a sprig or two of rosemary. Reduce summore. Stir in a 1/2 tsp of smoked paprika. Maybe some heavy cream.Finish with a pat o' butter, strain and drizzle over the pork.

Make a turkey or roast duck.

Have a cognac and play grab-ass with your lover.

Happy TG.

J

I see. Now that I'm a nice, safe two-thousand miles away you get all flirty. It's gonna snow on TG here. I'll just sit here alone.
